Walking the High Wire:

Unserstanding and Managing High pH and Other High-Risk Wines

As winemaking styles trend toward higher pH levels, winemakers are confronted with new and challenging questions:

What are the dangers of high microbial load?
What is the most effective way to clean a barrel?
Are there alternatives to filtration?
What is Pediococcus doing in my wine?

ETS Laboratories, Scott Laboratories and BevTrac Mobile Quality Systems are combining forces to provide information that helps answer these questions. This seminar will cover strategies for minimizing risk throughout the entire winemaking process and will include information on:

Identifying High-Risk Wines
Understanding Microbial and Analytical Data
Effective Methods for Cleaning and Sanitizing Barrels and Equipment
Oenococcus, Pediococcus, and Lactobacillus Biogenic Amines
